Stuffed Calamari Recipe - Sauteed Calamari Recipe

There are many ways of preparing calamari, whether you are on a diet or not. Grilled or baked stuffed calamari is one of my favorite calamari recipes. It takes some time to make, but it is worth your time and effort. And this is one of my favorite cheat meals, so don't even bother on counting calories ...

In suitable pot, boil some water. Add some salt and cook rice. Amount of rice depends on number and size of calamari you have.

Cook rice for 10-12 minutes, even more if you are using brown rice. Brown rice taste better, at least for me, so I use it more often.

Note: Whenever I make fish and similar recipes, I like to use laurel. Some people don't like laurel and can have stomach issues due to it. So use it in moderation ...

... and some good white wine. Don't worry (at least not too much) about alcohol - it will evaporate, but leave aroma and fragrance. That is why one must use only a good wine.

 stuffed calamari recipeThe easiest and simplest way of filling calamari is with the spoon. One can find various 'gadgets' for filling and stuffing various foods, but ordinary tablespoon (depending on the size of calamari) will do the job fine.

During stuffing, one can add a teaspoon (not a tablespoon!) of olive oil directly into the calamari. It will improve taste and aroma and prevent filling to be dry - yes, more calories, but who cares ...

After stuffing calamari, close them with a toothpick.

Spray some olive oil onto your baking pan, put calamari and potatoes and then, again, add some good white vine.

 stuffed calamari recipeWrap baking pan with aluminum baking foil - this will prevent loss of fluids during baking. Bake calamari for some 30-35 minutes on 225°C.

Then remove foil and bake 15 more minutes to get golden brown color of calamari and potatoes.

Serve warm and enjoy...
